When I think of breakfast (desayuno) in Mexico, I think of chilaquiles divorciados, mollettes, and coffee with sweet pastries. Of course, The Ledge at The Cape, a Thompson Hotel has those and they are fantastic. However, the real treasure is “The Cape Toast,” their take on the traditional French toast that is part donut, part croissant, and all delicious. In fact, in my opinion, it is the best French toast on the planet. It is so good, that I often order one for the table whether anyone wants to share it with me or not. It’s mandatory.

If there is anything good that has come out of the Coronavirus lockdown it is that The Cape, a Thompson Hotel has shared their famous French toast recipe with the rest of the world. Of course, eating this dish on the patio of The Ledge with waves crashing in the background is my favorite way to enjoy “The Cape Toast” but during these different times, enjoying it from home is the next best thing.
